Cheesy Salsa Chicken

Ingredients
1 tbsp Olive oil (for cooking chicken)1-2 tsp Taco seasoning mix1 lb chicken breasts, thawed (could also use Chicken tenders or chunks)8oz Salsa 4oz Shredded cheese1 cup, uncooked rice2 cups cooking broth or water
Directions
Preheat over to 450. Cook rice according to package directions in water or broth. Spread into a greased 8x8 cooking dish.

Cook Chicken breasts on the stovetop in 1 tbsp olive oil. Sprinkle taco seasoning over chicken. Cook until done till chicken is no longer pink inside. Cut chicken into strips or chunks. Set COOKED chicken over rice in 8x8 dish.

Spread salsa evenly over rice & chicken. Sprinkle shredded cheese over chicken. Cover with foil and back for about 30 mins or until hot & bubbly and the cheese is melted. Top with a tbsp of sour cream to complete the meal serve with a side of veggies!
