Brown Rice and Pepperoni Salad

3 ounces turkey pepperoni, quartered1/2 cup chopped green pepper1/2 cup chopped red pepper2 cups shredded park-skim mozzarella cheese3 scallions, chopped1 small can sliced black (ripe) olives4 Roma tomatoes, seeded and chopped2 cups cooked brown rice
Mix all ingredients together and chill for at least 3 hours. I serve lite Italian dressing on the side so I can measure out my portion and track it separately. If you cook your own brown rice, you'll need to allow time for it to cool before assembling the salad as hot rice melts the cheese and it's just not attractive! Yields 6 one-cup servings.
