Fast Wheat Bread Pepperoni & Mushroom Pizza

Ingredients
8 slices lite wheat bread (high fiber, low cal)1/2 cup lowfat Pizza Sauce (1g.fat total)4 oz Cabot 75% reduced fat sharp Vermont cheese, shredded1/4 cup freshly shredded Parmesan cheese1 serving (17slices) Hormel turkey pepperoni1 can (4 oz) sliced mushrooms, drained and rinsed2 -4 T. sliced or diced red onions (or your favorite),optionaloreganodried basilgarlic powder
Directions
Spray a jelly roll pan with non-stick cooking spray. With a rolling pin (can also use a spaghetti sauce can) take each slice of wheat bread and roll out very thin. Place bread two across; four down on pan making sure edges overlap. Press on seams of bread. Place 1 T. of pizza sauce on each slice and spread to edges. Combine cheeses and sprinkle evenly over pizza. If desired sprinkle lightly with oregano, basil and garlic powder. Place 2 slices of pepperoni on each bread slice and top with mushrooms and onions. If desired add other healthy toppings. Place in a preheated 450 degree oven for about 13 minutes. Crust will crisp up and cheese should be nicely melted. Makes 4 servings (2 slices per person). Use the bread slices as a guide for cutting. Enjoy!
