Low Carb Cheesecake Dessert

Ingredients

1 package (8 oz.) Cream Cheese (regular or 1/3 less fat)1 carton Heavy Whipping Cream (1 pint)1 tsp. vanilla extract1 package SF Jello mix, lemon (or you can use another flavor)
Let cream cheese get to room temperature.
Disolve Jell-O with 1/4 cup boiling water, stir until completely disolved. Set aside.
Whip cream until it coats the mixers, about 2-3 minutes.
Add vanilla to cream cheese and beat until smooth. Add the Jell-O to the cream cheese and beat until all incorporated.
Fold in 2 cups of the whipped cream.
Refrigerate until ready to eat!
Great topped with fresh berries or on its own with a little whipped cream (add the extra carbs). Makes about 6-8 half cup servings.
