Chicken Cacciatore (sicilian style)

2.5 - 3 lbs of boneless, skinless chicken breast2 cups chopped onion4 garlic cloves, minced0.5 cup chopped fresh basil0.5 chopped flat leaf parsley0.5 cup red wine vinegar0.25 cup sliced green olives0.25 cup capers1 tbsp sugardash of red pepper28 ounce can diced tomatoes, undrained2 bay leaves2 shallots choppedJuice of 1 lemon
Sear chicken over medium-high heat until chicken is lightly browned on both sides. Remove Chicken from pan.
Saute onions for 5 minutes, then add garlic and shallots for another 3 minutes. Once onions are soft, add the remainder of the ingredients including chicken. Bring to boil, cover, reduce heat and simmer 20 minutes. Uncover and simmer 25 minutes or until chicken is tender. Discard bay leaves.
Serves 10 (4 oz serving of chicken)
Serve over pasta, rice or couscous
