Balsamic Portobello Sandwiches

Ingredients
2 Thomas' Light Multigrain English Muffin (100 cal ones) 2 portobello caps (or sliced portobellos)Extra Light Olive Oil, 0.5 tbsp balsamic vinegar, 3 tbsp Onions, raw, 0.25 cup, chopped Red pepper, chopped (.5 cup)Tomato 2 Slices Low fat cheese of your choice (I used Trader Joe's light cheese blend - 2 tbsp, not calculated in recipe nutritionals)
Directions
Serving size is 2 small sandwiches (1 meal)

1) Heat oil in small non stick pan. You don't need a lot, the oil adds fat/calories quick so just enough to sautee the onion.

2) Add onion and let it cook down a bit

3) Toast english muffins (optional)

4) Add portobellos to cooked down onions

5) Once portobello caps are warmed through, add balsamic. I coat both sides of mushrooms and the rest drips and cooks through onions. Balsamic vinegar has lots of sugar so be cautious using it if that's a priority for you.

6) Add tomato slice and cheese to toasted muffins, then top with a portobello cap and onions.

Warning: Sandwiches are messy!

You can substitute a more substantial roll and only eat one sandwich if you prefer. I enjoy eating 2 sandwiches for under 400 calories :)
