Pinto Bean and Vegetable Soup

Ingredients
Grapeseed Oil, .5 tbsp Onions, raw, .5 medium Peppers, sweet, red, fresh, .5 largeZucchini, 3 mediumCollards, 1 cup, cooked and choppedOrganic Pinto Beans, 1 can Salsa, Hot Chipotle, 2 tbspSalsa, Fresh Packed Mild, 4 tbsp Ground cumin, 1 tbsp Chili powder, 1 tbsp Chipotle Powder, .50 tsp Salt/Pepper to taste1/2 - 1 cup water
Directions
Heat Oil in medium pot. Add Onions, Peppers and Zucchini. Sauté until tender and add remaining ingredients and simmer for 5-10 minutes. With a stick blender, blend until desired consistency leaving some vegetable and beans intact for texture!!!

Can be topped with diced onion, cilantro, salsa, sour cream or shredded cheese!!!
