Beto's Moqueca

Ingredients
4 tbsp. olive oil3 large onions, chopped3 cloves of garlic, minced2 lbs. swordfish, cubed4 large tomatoes, chopped1 large red bell pepper1 bunch of scallions, choppedjuice of 3 limes1 bunch of fresh cilantro, chopped1 1/2 cups marinara saucepinch of cayenne pepper1 1/2 tbsp. cayenne red pepper ("hot") saucesalt and pepper to taste
Directions
Heat oil in a large pot. Add onions, garlic and fish and cook until fish is "browned" (about half done). Add remaining ingredients and bring to a boil. Reduce heat and simmer 10 - 15 minutes, until fish is fully cooked.

Yields six (6) 1-cup servings.
