German Potato Salad

Ingredients
2.5 lb red potatoes, quartered3 tbsp EVOO1 med red onion, quartered and very thinly sliced4 c coarsely chopped kale6 tbsp red wine vinegar1 c beef stock1 lb kielbasa, cut into half-moons1/4 c chopped fresh parsley
Directions
Put potatoes on to boil in water until fork-tender (about 12 to 15 mins).

Meanwhile, heat 2 tbsp EVOO in a large skillet. Add red onion and cook until tender (about 5 mins). Add kale little by little until wilted down. Add vinegar and stock and remove from heat.

Heat large skillet and add kielbasa, stirring occasionally until browned and a little crispy.

Drain potatoes, put back in hot pot, add 1 tbsp EVOO and fold in onion and kale mixture, parsley, and kielbasa. Add salt and pepper to taste.
