Leek & Celery Root Soup

Ingredients
3 Tbsp I can't believe its not butter2 Med leeks cut into thin 1/2 moons1 med yellow onion, thinly sliced1 Tbsp salt & pepper1 1/2 lb celery root, cut into 1/4" half moon slices5 cups turkey stock or water
Directions
Melt butter, saute leeks & onions til soft (about 20 mins). Add celery root, 1/2 salt & pepper, and 1/2 cup stock. Cook until root is tender then add remainder of stock. Simmer 20 minutes. Let cool then puree. Best reheated after sitting in fridge overnight.
