100 grams Arborio Rice150ml Water10 grams Garlic Diced20 grams Onions Sliced30 grams Mushrooms (mixed)4 Asparagus Sticks (Fresh)30 grams Peas25 grams Smoky PancettaSalt (just a pinch)1 tsp olive oilMixed Italian Herbs
Prepare rice in a separate pot to the veg and other ingredients (this helps so that veg is not overcooked in the process). Cook rice for about 10 minutes stirring frequently.
In a separate pan pour a little water and cook onions and garlic until slightly soft. Chop asparagus and add together with mushrooms and followed by the peas. Cook for 1 minute then add pancetta and cook for a further minute. Now add rice, salt, herbs, mix them well and cook for about 10 minutes. Once you turn off the heat add a teaspoon of olive oil and mix well.
You should now have a lovely tasty Risotto :)
