Vegetarian Potato Soup

4 cups vegetable stock7 cups cubed potatoes1 large onion (about 2 cups cubed)3 stalks celery3 Tbsp I can't Believe its not Butter Lite2 cups Silken Soy Milk Lite1/2 cup instant potato flakesSalt, pepper and nutmeg to taste
Makes 10 1-cup servings
Cube potatoes and cook until soft in vegetable stock
Saute chopped onion and celery in margarine until tender
Add soy milk to cooked onion and celery and heat till milk is warm while stirring.
Add potato flakes to soy veggie mixture and stir till absorbed
and thickened.
Add soy mixture to potato/broth mixture and mash slightly with a potato masher.
This makes a thick potato soup. Additional broth can be added if you prefer a lighter soup.
