Roasted Sweet Potatoes with Pecans and Onions

sweet potato, about 1 cup, cubed1/4 cup pecans 3 tsp, unpacked brown sugar1/2 cup chopped red or vadalia onions1 tbsp olive oil1-2 cloves garlic, crushed1 tsp thyme 1 tbsp balsamic vinegar
Toss together sweet potato, onions, garlic, olive oil and thyme. Pour into shallow baking dish. Bake at 425 degrees for 30 minutes until softened and golden brown, stirring half way. Meanwhile, toss chopped pecans with brown sugar. Add to sweet potatoes and bake 5 minutes until brown sugar carmelizes. Drizzle with balsamic vinegar and season with salt and pepper to taste.
