Healthy Apple/Oatmeal Muffin

1 cup Low fat vanilla soy milk1 cup quick oats1/2 cup all purpose flour1/2 cup whole wheat flour1/4 cup Splenda2 tsp baking powder1/2 tsp ground cinnamon1 large egg1/4 cup unsweetened applesauce1/2 tsp vanilla extract1/2 finely chopped apple
Mix together soy milk and oats set aside for 15 minutes. Meanwhile, sift together all dry ingredients in a medium mixing bowl; make well in center of ingredients. Once oats have soaked, mix all wet ingrediants, including apples together. Once mixed, pour all at once into dry ingredients stirring until just moistened. Do not overstir. Divide into muffin tin either sprayed with cooking spray or prepared with muffin tins. Place in 425 degree oven for 20-25 minutes or until golden brown, cool on wire rack.
