Eggplant Caponata

Ingredients
1 (sm) Eggplant - Peeled1 (md) Red Pepper - Cleaned1 cp sliced Mushrooms1 cp tomato sauce (chunky)1 Tbsp. olive oil2 Cp.s cooked couscous1 Tsp. Italian seasoning .5 oz Soft goat cheese (opt.)
Directions
Dice all vegetables add to pot and cook with olive oil, seasoning and tomato sauce.(smaller dice will cook faster) Place lid on pot and let cook untill vegetables are soft and have released their liquid, stir occasionaly.
Serve over couscous, sprinkle with crumbled cheese.
