Barbara's Red Beans and Rice

Ingredients
2 T olive oil6 cups of cooked kidney beans or 3 cans of kidney beans2 cups of pictsweet onion, pepper and celery seasoning4 cloves of garlic crushed14 ozs of turkey smoked sausage1 bay leaf1/2 t parsley 1/2 t of thyme1/2 t salt 1 teas of zatarains seasoning 1 teas of tabasco sauce1/4 t black pepper1/4 t red pepper1/4 t red pepper flakes
Directions
Cook l lb of dry beans and when cooked use 6 cups. Saute onions etc in olive oil and then add sausage and seasonings and beans. Cook for 60 mins . Enough water to cover beans.
