Vegan Potato Soup

Ingredients
10 Potatoes, boiled, peeled and diced1 Large Yellow Onion, diced4 Large Ribs Celery, diced1 teaspoon garlic powder2 Cubes Not Chick'n Boullion Cubes4 Tablespoons Earth Balance Margarine5 Cups Plain Silk Soymilk2 Cups WaterFor Garnish:BacosChopped Green OnionSalt and Pepper to Taste
Directions
Saute onion and celery in melted margarine and boullion and spices until tender. Add Potatoes and Soymilk and water to mixture and heat through. Use a submersible blender to blend to desire consistency. Serve with pepper, chopped scallion and bacos.

This has been extremely popular with vegan and non-vegan friends alike. Keeps great in the fridge, too.
