Double Chocolate High Fiber Cookies

1/4 C butter3/4 C unsweetened applesauce1/2 C non-caloric sweetener (Splenda, Ideal, Truvia)3/4 C packed brown sugar2 eggs1 C whole wheat flour1/2 C unsweetened baking cocoa1 tsp baking soda1/4 tsp salt1 C Fiber One original bran cereal1 1/2 C old-fashioned oats3/4 C Guittard vanilla milk baking chips
1. Heat oven to 350 degrees. In large bowl, stir together butter, applesauce, brown sugar, sweetener and eggs. In small bowl, stir together flour, cocoa, baking soda and salt: stir into butter mixture.
2. Stir in cereal, oats and baking chips. Onto ungreased cookie sheet, drop dough by heaping tablespoonfuls 2 inches apart.
3. Bake 9 minutes. Cool 1 to 2 minutes: remove from cookie sheet to cooling rack. Cookies will stick slightly because they are low in fat, but will release more easily when slightly cooled. When completely cool, store in a tightly covered container.
