Double Chocolate Cranberry High Fiber Cookies

1/4 C butter3/4 C unsweetened applesauce3/4 packed brown sugar1/3 cup non-caloric sweeteneer (Splenda, Truvia, Ideal)2 eggs1 C whole wheat flour1/2 C unsweetened baking cocoa1 tsp baking soda1/4 tsp salt1 C Fiber One original bran cereal1 1/2 C old-fashioned oats3/4 C vanilla baking chips1/2 C Craisins
1. Heat oven to 350 degrees. In large bowl, stir together butter, applesauce, brown sugar, sweetener and eggs. In small bowl, stir together flour, cocoa, baking soda and salt: stir into butter mixture.
2. Stir in cereal, oats, craisins and baking chips. Onto ungreased cookie sheet, drop dough by heaping tablespoonfuls 2 inches apart.
3. Bake 9 minutes. Cool 1 to 2 minutes: remove from cookie sheet to cooling rack. Cookies will stick slightly because they are low in fat, but will release more easily when slightly cooled. When completely cool, store in a tightly covered container.
Yields 3 1/2 dozen cookies.
