Whole Wheat Snickerdoodles

2 3/4 cups whole wheat pastry flour2 teaspoons baking powder1/2 teaspoon salt1 cup (2 sticks) unsalted butter, softened1 1/2 cups sugar2 large eggs1 teaspoon vanilla extract2 tablespoons sugar2 teaspoons ground cinnamon
Preheat oven to 350*F. Sift flour, baking powder and salt together, set aside. Put butter & 1 1/2 cups sugar into large mixing bowl and beat until fluffy. Add in eggs & vanilla. Gradually mix in flour mixture.
Stir together remaining sugar & cinnamon in a small bowl. Shape dough into small balls (~1 inch) and roll in cinnamon sugar. Space 2 inches apart on baking sheets lined with parchment paper.
Bake cookies, rotating sheets halfway through, for 12-14 minutes until edges are golden.
