Armenian Plaki (white beans in tomato sauce)

2 carrots, diced2 to 3 stalks celery, diced2 medium potatoes, diced1 clove garlic, minced1 (6-oz) can tomato pastedash of salt2 (15-oz) cans white beans, drained and rinsed2 Tbsp. olive oil1 onion, sliced2 cups of water
1. Blend the tomato paste with about 2 cups of water and add the carrots, celery, potatoes and garlic. Cook until vegetables are tender, about 15 minutes.
2. Add the beans and cook about 15-20 minutes more. Remove from stove.
3. In a skillet, saute the onion until golden brown. Gently add to cooked plaki.
4. Serve warm or chilled, with lemon juice or lemon wedges.
