Spicy Chicken Coconut Curry

2 tbsp HOT curry powder1 tsp ground ginger1 tbsp coconut oil1 med. red onion5 cloves garlic1.8 pounds boneless, skinless chicken breasts1.5 cups chopped broccoli (or cauliflower)12 oz. coconut milk made from 3/4 cup maggi coconut powder mixed with 1-1/2 cups water
Heat Skillet on medium, add curry powder and ginger - heat for 1 minute until fragrant. Add oil, chopped onion and garlic, cook until tender. Add diced chicken, cover and cook for 10 minutes.
Add broccoli, coconut milk. Reduce heat, simmer 30 minutes.
Serve over 1/2 cup basmati rice (not included in calorie count)
