1-1/4 pounds ground beef4 cloves garlic, minced2 cups salsa1 can (16 oz) refried beans1 can (16 oz) black beans1 can (10 oz) enchilada sauce1 envelope taco seasoning6 whole wheat tortillas3 cups shredded cheese, divided3 cups crushed tortilla chips, dividedOptional: sliced black olives, guacamole, chopped tomatoes, sour cream
1. In a large skillet, brown the beef with the garlic & taco seasoning. Stir in the salsa, enchilada sauce, refried beans & black beans.
2. Layer 2 tortillas, 1/3 of the meat mixture, 1 cup crushed tortilla chips & 1 cup cheese. Repeat layers. Top with remaining tortillas & meat mixture.
3. Cover & bake at 375 degrees for 30 minutes. Uncover; sprinkle with remaining cheese & top with tortilla chips.
4. Bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving. Garnish with optional items if desired.
