Ingredients
3 Eggs - Eggland's Best (1 Large)Feta Cheese, .15 cup, crumbled 2 Morningstar Sausage Patties 1/2 cup Mozzerella & Provolone shredded cheese - Tops 1/2 cup Green Peppers (bell peppers),chopped 1 medium Mushrooms, chopped 1 tbsp Olive Oil McCain Roasters - Grilled Garlic & Onion (3 oz), 1 serving
Directions
Preheat oven to 325 degrees. Swirl olive oil around small baking dish & then sprinkle in potatoes. Whip eggs & pour in to pan. Season them with some black pepper & italian seasoning. Place mushrooms, green peppers & chopped up veggie breakfast sausage patties over egg mixture. Sprinkle with feta & the shredded mozzerella/provolone. Bake for about 30 minutes. Can serve with toast or even a nice salad for dinner...even a bit of salsa on the side.
