Santa Fe Salad with Chili-Lime Dressing

Ingredients
6 TBS low fat mayo3 TBS cilantro3 TBS water3 medium scallions, minced1 1/2 TBS lime juice2 tsp sugar1/2 tsp chili powder15 oz can black beans, drained and rinsed1 1/2 cup frozen corn kernels, thawed2 cup grape tomatoes1 medium sweet red peppers8 cups romaine lettuce, cut into thick shreds
Directions
Mix first 7 ingredients together to make dressing. Set aside.

In a large bowl, layer remaining ingredients in order listed. Dress, toss, serve. Yields about 2 cups salad and 1 1/2 TBS dressing per serving.
