Awesome Shrimp & Crab Cakes

Ingredients
Coating =1/4 cup Whole Wheat Flour1/4 cup Panko Bread Crumbs1 Large Egg1/2 tbsp Reduced Sodium Chicken BrothPinch of Garlic PowderPinch of PaprikaPinch of Black PepperCakes =3 Garlic Cloves, minced1 can of Shrimp, drained1 can of Crab, drained1/4 cup Arugula, roughly chopped1/4 cup Panko Bread Crumbs2 tbsp Parmesan & Romano cheese2 tbsp Honey1 tsp Old Bay Seasoning1 tsp Worcestershire Sauce1 tsp Lime Zest1 tsp Dijon Mustard1 tsp Extra Virgin Olive Oil1/2 tsp Thyme1/2 tsp CorianderPinch of Black PepperHandful of Fresh Chives
Directions
1) Preheat nonstick skillet.

For Coating

2) On a plate, combine flour and black pepper

3) In a bowl, beat egg with chicken broth

4) On another plate, combine panko, garlic powder, and paprika

For Cakes

5) With hands, mix all cake ingredients (except EVOO) together and divide into 4 patties. Cover and rest for 15 minutes before coating - this helps ingredients bind.

6) Gently coat cakes on both sides with flour, then dip on both sides in egg mixture, then dredge on both sides in panko mixture

7) Add cakes to skillet with EVOO. Cook until brown on both sides.
