Colorful cheese omelet

Ingredients
1 egg2 egg whites2 T. chopped fresh spinach2 T. chopped sweet red or green pepper1 green onion, chopped2 T. shredded cheddar cheese
Directions
1. In a small bowl, whisk the egg, egg whites, spinach; set aside. In a small nonstick skillet coated with cooking spray, saute pepper and onion until tender. Reduce heat to medium.
2. Add egg mixture to skillet (mixture should set immediately at edges). As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, sprinkle with cheese; fold other side over filling. Slide omelet onto a plate.

    Eggcelent dish! The original recipe as posted in Healthy Cooking calls for 1/8t hot pepper sauce though which I think makes the dish much better. Also using low fat cheese helps the nutritional value a bit. - 1/29/10
