Pozole

Ingredients
Pork loin, trimmed and cut into ~1/2 to 1" cubesdiced onioncumin, salt pepper, mexican oreganoGarlic salt2 small cans fire roasted mild chilis2 cans [4 oz] green salsa1 can drained, rinsed yellow hominyOne large potato diced smallchicken broth
Directions
Brown pork cubes in as little oil as possible. Combine remaining ingredients and simmer slowly until all is done. This can be done in a slow cooker for a few hours, definitely not an all day thing. Season to taste - I tend to put more salt and cumin than the average person.

To serve, I love to put a mound of chopped tomato, avocado, onion, jalapenos and cilantro - kind of a deconstructed quacamole in the center of the bowl and pour soup over it, maybe a squeeze of lime over the top. SErve with fresh, handmade corn tortillas

I think it will easily serve 6, possibly 8.
