Three Bean Salad

For Salad:1 can black beans1 can chili beans1 can white beans2 tbsp minced garlic½ onion chopped¼ cup celery chopped1 tbsp dried oregano or Italian seasoning3 tbsp Italian dressingFor Dressing:1 tbsp vinegar (any kind)2 tbsp olive oil½ tbsp Dijon mustard½ teaspoon sugardash of salt and pepper
Makes about 8 1/2 cup servings.
Rinse and drain all beans! Then mix, how easy was that?! Best to let it marinate in the fridge for a while, but you can always eat it right away. You could use any kinds of beans (and as many kinds as you want), I’d probably sub the white beans for chickpeas, but I like chickpeas a lot. Or if you’re feeling creative, make your own dressing; recipe suggestion will follow!
