Chicken Cacciatore

Ingredients
4 teaspoons olive oil1 tablespoon minced garlic1/2 cup onion copped1 cup green peppers chopped2 cups sliced mushrooms1 lb boneless skin less chicken breast cubed2 cups (1 -14.5 ounce can) Italian style diced tomatoes with juice4 cups cooked whole wheat pasta
Directions
Heat the oil in a medium saucepan over medium high heat; add garlic, onion, peppers and mushrooms. Saute 4 minutes until mushrooms release their juices. Add raw cubed chicken and saute until golden brown on all sides-about 5 minutes. Add tomatoes with their juices and bring to a boil. Reduce to low, simmer 15 minutes uncovered. Place pasta in a shallow serving bowl and top with chicken and vegetable mixture.
