Rolled Oatmeal Cookies

2 Cups oatmeal1 Cup flour3/4 Cup Sugar1 tsp salt3 heaping tbsp shortening1 beaten egg1 tsp baking sodaSlightly less then 1.4 cup of milk
In a large mixing bowl mix dry ingredients (1st 4) and cut in shortening like pie crust.
In a liquid measuring cup add beaten egg and baking soda and enough milk to make 1/2 cup.
Mix with dry ingredients.
On a floured board roll out thin and cut circles with biscuit cutter or cookie cutter. If dough is to sticky add a little extra flour. The cookies taste best when rolled really thin. They get nice and crunchy when cooled.
Bake on cookie sheet at 375 degrees for about 10 minutes or until lightly browned. Cool on cooling rack. Store in container. They freeze great.
Makes about 3 dozen.
