Introduction

Ingredients

    1/2 cup butter or margarine
    1 3/4 cup granulated sugar
    4 eggs
    1 tsp. vanilla (or almond) extract

    1 1/4 cups flour (I use whole wheat)
    3/4 cup ground almonds
    3/4 tsp. baking powder

    12 plums, pitted and sliced into wedges.

    2 tbsp. additional sugar

Directions

Blend butter and sugar and start beating in eggs, 1 at a time, until the sugar is dissolved and the whole thing is nice and creamy. Stir in the vanilla.


Combine the flour, ground almonds and baking powder and add it to the egg mixture. Stir well.


Spread the batter out on an 11 X 17 cookie sheet with sides (the jelly-roll pan type). Lay the plum wedges, skin side down, over the top of the batter.


Sprinkle with the additional (or reserved) sugar. Bake in a 350 degree oven for about 20 to 25 minutes until golden. Turn oven off and let cool in the oven with the door open-- this will help to evaporate any excess moisture from extra-juicy plums. Cuts into 16 squares.

    Incredible!
    I made this today with plums from our garden...it was so easy...and so delicious.....my husband is a really good cook, knows a lot about food...he said it was the best cake he can remember eating !!! I used quite ripe juicy plums, red, not the prune plums....got 16 serves...have frozen some , thanks - 2/22/13
