Ingredients
1 small onion, chopped1 red pepper, chopped1 tomato, chopped1 can of romano beans1 c. water1 small potato, cubed1 carrot, chopped1 tsp. cumin1 tsp. lemon juice
Directions
Sauté onion and pepper in oil. Add tomato, beans and water, then potato, carrot, cumin and lemon juice. Simmer for about 20 minutes.
