Beans, black, 2 cup (remove)Peanut Oil, 0.5 tbsp (remove)Yellow Sweet Corn, Canned, 1 cup (remove)Tomato Sauce, 0.5 cup (remove)College Inn Chicken Broth - 99% Fat Free, 1 cup (remove)cottage cheese, Friendship, nonfat, 0.5 cup (remove)
Fry the onions in the oil, add tomato sauce (or fresh tomatoes) and cook until the tomatoes are cooked. Add beans, corn and the chicken stock. Cook high heat until boiling. Then simmer for ~ 10 mins. Add the cottage cheese, simmer for another 5 mins. Add spices to taste (black and red pepper, cumin). you can serve with chopped fresh cilantro. Enjoy!
