16 oz 93% lean ground beef1 can of peas and carrots1 can diced tomatoes3 large potatoes (peeled and cubed and boiled to tender)3 tbsp grated cheese1 tbsp butter1 tsp salt1 cup chopped onion1/4 cup beef broth
Preheat oven to 400. In heated skillet cook ground meat drain and put in a dish to the side. add onions to the same skillet and cook until soft and lighly browned. Add chicken broth and bring to a simmer. Add tomatoes simmer for 3 minutes and than add peas and carrots simmer for another 3 minutes add beef back into skillet and mix everything together. Add to a sprayed cassarole dish. Add butter and salt to the mashed potatoes spread potatoes over the beef and prinkle the grated cheese over potatoes. Bake for 15 minutes or until potatoes are browned. Makes 6 servings. Enjoy!!

Haven't tried this yet but plan to. I bet you could reduce the calories a bit by using ground turkey instead of beef. I think I might try that! - 1/27/10

I tried it with ground turkey and I thought it tasted better with beef. Thanks for your input! I hope you like it!
