Ingredients
11/2 cup unbleached flour1 cup whole wheat flour1/3 cup white sugar1/3 cup splenda2 1/2 tsp. baking soda1 teaspoon cinnamon1/2 teaspoon ground cloves1/2 teaspoon ground nutmeg1 1/2 cup unsweetened applesauce1 cup molasses3 egg whites or 3/4 cup egg substitute4 oz. finely shredded baby carrots2 cups finely chopped apples with skins
Directions

1. combine flours,sugar, baking soda, and spices, stir well. Add remaining ingredients, and stir well.
2. Coat 9x13 pan with non stick cooking spray. Spread the batter evenly in the pan and bake at 325 for 40 min. orjust until a wooden toothpick comes out clean.
3. Cool the cake for 20 min. and cut into 32 squares. Serve at room temp or warm. Garnish with a light whipped topping if desired.
