Lime Cilantro rice

Ingredients
2 Tbspn olive oil4 cups long grain white rice1 bunch cilantro, finely chopped6 cups water2 Tablespoons lime juice2 tsp, crushed garlic
Directions
Heat oil in a large skillet or pot. Add the rice, garlic and cilantro. Saute 3-5 minutes, stirring frequently. Add water and lime juice and bring to a boil. Then reduce the heat and simmer until all the liquid is absorbed by the rice (about 20 minutes). You can also use a rice cooker for this.

Makes about 24 servings.
