Pizza egg muffin

Ingredients
1 English Muffin (I used Fiber One)4 slices of turkey pepperoni, chopped1 T onion, chopped (I used a vidalia onion)1/4 C egg substitute2 T shredded mozzarellaGarlic powder, thyme, basil to taste
Directions
Toast the english muffin. Saute the onion and pepperoni until the onion is soft. Pour the egg over the onion and pepperoni, sprinkle with garlic powder, thyme and basil, then sprinkle the cheese on top. Allow the eggs to cook until set, then fold in half. Set on top of the toasted english muffin.
