Low-fat Whole Wheat Banana Pancakes

1 egg3/4 cup skim milk2 medium bananas1/4 teaspoon vanilla extract1 cup whole wheat flour1 1/2 tablespoons sugar1 tablespoon baking powder1/2 teaspoon salt
Mash bananas.
Mix egg, milk, mashed bananas and vanilla extract.
Add flour, sugar, baking powder and salt until smooth.
Spray griddle with nonstick cooking spray. Heat on med to med-high until hot.
Pour batter onto hot griddle and cook until bubbles form, then flip. Cook about a minute until evenly browned.
Makes 4 servings.
