11 whole wheat lasagna noodles (Healthy harvest)3 cups extra lean ground turkey300 grams Light old cheddar (no name brand)300 grams Light Mozzarella (no name brand)300 grams Light ricotta (tre stella)4 Tblsp Light Grated Parmesan (Kraft)3 cups President's Choice Roasted Garlic spaghetti sauce
Preheat oven to 450 F. Cook lasagna noodles in water until al dente or desired tenderness. Brown lean ground turkey and onion, drain. Throw ground turkey and onion back in pan and add half one cup of sauce. Set aside. In 12 x 8 inch glass casserole dish, add sauce to bottom of pan to prevent sticking. Layer 3 lasagna noodles. Cover noodles with sauce sparingly. Add shredded cheddar, then meat mixture, then mozzarella, then ricotta and sprinkle with one tblsp parmesan. Add layer of 4 noodles, sauce, cheddar, meat mixture, mozzarella, ricotta and tablespoon parmesan. Top layer consists of 4 lasagna noodles, sauce, cheddar, mozzarella and parmesan. Cover with tin foil and place in preheated oven. Bake for 40 minutes and reduce temp to 400F for remaining 20 min. Makes 12 servings. 1 serving = 3" x 2.5". It's hearty enough to satisfy even my husband who's a rabid meat and potatoes kinda guy. Serve with a low fat caesar or mixed greens salad with oil and vinegar dressing. I skip the garlic bread for myself but make some for my family.
