Fast Mexican Pita Scramble

Ingredients
2 egg whites (can use 3 for a really stuffed pita)2 T. shredded 75% reduced fat cheddar cheese (Cabot)dash of hot saucefresh ground pepper1/2 of whole wheat pita2 T low sodium salsa (Try my recipe for salsa "Fabulous Low Sodium Salsa")
Directions
Spray a small non-stick skillet with cooking spray. Heat over medium high heat. In a small bowl, whisk egg whites, pepper and a dash of hot sauce to your liking. Stir in cheese. When skillet is hot, pour egg mixture in pan and let it cook until set enough to flip. Cook the other side until done (you can also "scramble" the eggs instead if this is your preference.) Remove from heat. Place salsa into pita half and then carefully fold egg and put into pita. If taking it on the go, use foil to gently wrap it. Serves 1.
