Golden Potato and Broccoli Soup

Ingredients
1/2 C Onion, diced6 C Yukon gold potatoes, diced4 C Water2 C Broccoli, finely chopped, fresh or frozen (defrosted)1/2 C. nonfat milk1 can Campbell's Cheddar Cheese soup, undiluted1 C. Kraft Mexican Style 4 cheese, 2% milk
Directions
Prepare Dutch oven with cooking spray. Over medium-high heat, add diced onions. Cook for about 3 minutes. Add water and potatoes. Cook until potatoes are beginning to get tender. Add broccoli. Cook until potatoes and broccoli are soft. With potato masher, mash vegetables slightly while in Dutch oven and water. Add milk, cheese soup, and cheese.

Cook about 10 minutes more.

Serving size is about 1 1/2 cups.
