General Tso's Chicken

3/4 cup vegetable broth1 1/2 Tbsp cornstarch1 Tbsp splenda2 Tbsp low sodium soy sauce1 Tbsp white wine vinegar1/2 tsp ginger2 tsp seasame oil2 medium scallions, diced2 Tbsp minced garlic3/4 tsp crushed red pepper flakes8oz boneless, skinless chicken breasts, cut into small pieces
In a medium bowl, whisk together broth, cornstarch, splenda, soy sauce, vinegar and ginger; set aside.
Heat oil in a wok or large skillet over medium high heat. Add scallions, garlic and red pepper flakes and cook about 2 minutes. Add chicken and cook until browned all over, about 5 minutes. Add sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes. Serve chicken over rice.
