Cinnamon Cookies

Ingredients
1/2 c. applesauce2/3 c. sugar1 egg1 t. vanilla2/3 c. splenda1-1/2 to 2 c. rice flour1 c. potato flour3 t. xantham gum1 t. baking powder1/2 t. baking soda1/2 t. salt1/2 c. fat-free greek yogurt
Directions
Heat oven to 425 degrees. Mix applesauce, sugar, egg, and vanilla. Blend dry ingredients (including Splenda); add to sugar mixture alternately with yogurt. Chill well. Roll out to 1/4" thick on well-floured board. Cut with 2" cutter. Place on greased baking sheet. Bake 8 to 10 minutes. Makes three dozen 2" cookies.
