Peach Topping

Ingredients
6 medium peaches, pitted and chopped2 Tbsp Splenda1 Tbsp cornstarch1/2 cup water1 tsp vanilla extract
Directions
Mix peaches, splenda, and cornstarch together in medium saucepan. Add water and heat to boil over medium heat. Simmer until sauce thickens and peaches are soft. If necessary, add additional water one tablespoon at a time to keep sauce from getting to thick. Remove from heat and stir in vanilla. Serve over whole wheat pancakes or frozen yogurt.

Makes six (1/2 cup) servings.
