Deceptively Delicious Macaroni and Cheese 1

1 1/2 cups elbow macaroni Nonstick Cooking Spray1 TBSP Olive Oil1 TBSP Flour1/2 cup skim milk1/2 cup butternut squash or cauliflower puree1 1/2 cups reduced fat shredded cheddar cheese4 ounces (1/4 cup) reduced fat cream cheese1/2 tsp salt1/8 tsp paprika1/8 tsp pepper
Cook macaroni according to package. While the macaroni is cooking, coat a large saucepan with cooking spray and heat over medium heat. Add the oil, the the flour, and cook, stirring constantly, until the mixture resembles a thick paste but has not browned (1-2 minutes). Add the milk and cook, stirring occasionally, until the mixture begins to thicken (3-4 minutes). Add the puree, cheddar, cream cheese, and seasonings and stir until the cheese is melted and the mixture is smooth. Stir into cooked macaroni and serve warm.
