Veggie Breakfast Cassarole

Ingredients
Beans, navy, 1 cup pre-cooked or cannedBell Peppers, red, yellow or orange, 1 cup chopped Onions, raw, 1 cup, choppedShredded Cheese blend, 1 cupEggs, 12 largeSpinach, 1 cup (it wilts and cooks down)Salsa Salt, pepper and Taco Seasoning
Directions
Pre-heat oven to 350. Saute the onions and bell peppers in a large pan. Add the spinach until it cooks down (a minute or so). Add navy beans (or whatever you have). Add 2 tsp of salt and pepper to taste (I like,1 tsp). And 1+ tsp of taco seasoning.
In a seperate bowl beat 12 eggs. Use a non-stick spray to prepare an 8X11 pan. Then add the veggie mixture to the eggs, and transfer the mixture to an 8X11. Bake for 40 minutes, add cheese and bake 5-10 minutes longer. Top with Salsa and Enjoy!
Serves 9 HUNGRY people, or 12 avg.
