Teriyaki Beef Stir Fry

1/4 cup Teriyaki Sauce1/4 cup water1 tsp cornstarch16oz lean beef, cut into strips2 10oz bags frozen stir fry vegetables (or equivalent fresh)1 cup pineapple chunks2 cups prepared brown rice (instant)
*You may choose to marinade beef overnight, if using tougher cuts. You would need about 1/2 cup teriyaki and water for this.*
Prepare rice using package instructions.
Over high heat in a wok or large non-stick skillet, brown beef strips until cooked through. Add vegetables and cook uncovered, stirring frequently, until they are crisp tender. Stir in pineapple during last minute, just to heat through.
While vegetables cook, whisk together teriyaki sauce, water and cornstarch until blended. Once veggies are done, create a well in center of pan and pour in sauce. Allow a minute or two to thicken, then turn off heat and toss to coat.
Serves 4: plate 1/2 cup of rice, and 1-1 1/2 cups of stir fry. Top with crunchy Chinese noodles for a little extra texture.
