Green Lentil Salad

Ingredients
1 1/2 cup cooked green lentils (or other type)1/2 a small red onion, diced1 cup carrot - cut into strips1 clove garlic, mincedabout 4 T minced fresh parsleyhalf a red pepper, diced2 T Light EVOO2T Lemon juice1 T tahini (sesame seed paste - sub a little sesame oil if this isn't available) dash of salt, pepper and cumin
Directions
Combine all ingredients, let stand 30 minutes for flavours to meld and serve.

Serve on a bed of spinach with some pita, tomato slices, cucumber slices, hummus and falafel for a complete meal. Great for entertaining.
