Couscous and Basil Stuffed Tomato

Ingredients
One large ripe tomato,2 Fresh Basil leaves, large1 cup plain couscous, uncooked1/4 cup watersalt and pepper to taste
Directions
Cut off the top of the tomato and remove the inside of the tomato with a spoon.

Place the 2 fresh basil leaves in the bottom of the hollowed out tomato. Set aside.

In a separate bowl combine the uncooked couscous, water, and salt and pepper and stir.

Place the mixture inside the tomato.

Sprinkle parmesan cheese on top.

Cook on the grill over high heet for 10-15 minutes until the couscous has soaked up the water. (Note: depending on the size of the tomato, you may not need to use the entire cup, as the couscous will swell.)

If you are using an oven, place tomato in a baking dish in a 350 degree oven for 25-30 minutes.
